We traveled from Bucharest to Bracau to Gura Humorului to Bistrita to TiraMures to Brasov to Burcharest. In the area of Tirgu Mures, we were treated, unexpectedly, to village meals. They prepared a sheep stew and mamaliga. One mamaliga had cheese and pork rinds, the other no pork. Both were wonderful. I'm surprised you don't have mamaliga recipies. And another thing, when we visited villages for folk dance performances (and teaching us), we were usually served a strong liquor (I think called streta) and/or blueberry or other berry based wines.
