Ghiveci calugaresc

"Ghiveci calugaresc" (in English, Monk's hotchpotch) is a special traditional dish from Oltenia,  and now you have the possibility to cook it too by using this recipe.

Ingredients

  • 250 g of carrots
  • 125 g onion
  • 250 g of potatoes
  • 200 g of celery
  • 200 g of cauliflower
  • 200 g of green peppers
  • 200 g of peas
  • 200 g of green beans
  • 200 g of marrows
  • 250 g of tomatoes
  • 250 g of cabbage
  • 200 g of egg fruit
  • 200 ml of oil
  • 1 tablespoon of tomatoes sauce
  • 1 glass of dry wine
  • 5 garlic cloves
  • salt & pepper – according to your taste
  • 1 bunch of chopped parsley and 1 of dill

How to cook it

  • Wash and clean all the vegetables. Chop big slices of carrots, celery, cauliflower, cabbage, egg plant, pepper, potatoes and marrows.
  • Clean the onion, chop it into small pieces then fry it in some oil, pouring a bit of water from time to time
  • Do the same procedure (called in Romanian “inabusire”) with the potatoes, carrots, celery and cauliflower but separately, in the rest of oil. Then mix everything up with the stewed (“calita”) onion
  • The cabbage, marrows, half of the tomatoes (chopped in quarters) quantity, the peppers, egg plants and the garlic chopped in small pieces are to be put to boil in a pot. When they are half boiled add the stewed vegetables (potatoes, carrots, cauliflower, celery and onion) and leave everything to boil together
  • When  all the vegetables are almost done add the tomato juice (previously dissolved in water) and transfer everything on a tray
  • Boil the peas and the green beans
  • Add the peas, green beans and the tomatoes cut in quarters and then pour the wine, sprinkle salt and some pepper
  • Bake the whole mixture in the oven for 30 min.
  • You can serve the “ghiveci” hot or cold.
  • Enjoy your new dish!
